A Little Story About Us
We started raising cattle in 2006 just 15 miles east of Denver. As Dry Dock Brewery continued to grow, so did our cow herd. Along the way we have partnered with a great cattleman and family from Otis and today we run a year round cow/calf/finish operation. In 2014 we purchased the Deer Trail Locker where we custom process beef, pork, lamb, bison and goats for customers throughout Colorado, Kansas and Nebraska. We started finishing our own beef for family and close friends and the demand for our beef has continued to grow through word of mouth, repeat customers and referrals from one customer to another. Like they say the best advertising comes from a satisfied customer.
Our philosophy is simple, we provide a premium product at an affordable and sustainable price. We have our hands on every step of the process, from the first time our calves hit the ground, the daily care of the cows/calves/bulls, springtime pastures to plowing snow to create a path to roll out feed and bedding, to the custom butchering and creating the specific cuts that best fits your family. You can say there are no middlemen between you and us. We like it that way and that makes us uniquely qualified to work with each of our customers to deliver a highly customized product at a sustainable price. We are not interested in just selling a family a beef for their freezer, we are interested in developing a relationship with families that will last generations.
how things work
1. we raise our own cattle
All of our beef comes from daughters or daughters of daughters.
3. grain finish
The calves remain in pasture until they are 15-16 months old, then they are moved to a different pasture to be grain finished using spent grains and mash.
5. humanely processed
All beef is humanely processed at our facility, Deer Trail Custom Cuts.
7. delivered directly to customer
All beef cuts are packaged to your specification in paper or vacuum sealed.
2. wean the calf
At 8 months old the calf is separated to a different pasture to be weaned. Our calves are 100% grass fed during this time.
4. hand selected
Every cow is hand selected to ensure top quality beef and then transported to our butchering facility.
6. quality aged
Our beef is dry aged for 2-3 weeks with continuous quality checks.

Whiskey Ridge Beef, located on the plains of eastern Colorado is owned and operated by Patrick and Morgan Einspahr and Curtis and Kerry Sayles (Morgan’s parents). The group has been raising cattle their entire lives. When Deer Trail Cattle Co. customers request completely grass-fed cow, we partner with Whiskey Ridge to provide that. The cattle are a mix of Angus, Angus cross, and most recently Murray Gray. Like Deer Trail Cattle Co., Whiskey Ridge Beef is passionate about producing beef through regenerative agricultural and bringing a connection back to our food.
Dry Dock Brewing supplies us with their spent grains, reducing waste and allowing for an efficient use of resources.
Mile High Spirits provides their left over whiskey mash, reducing waste and allowing for an efficient use of resources.
